The Challenge
Many commercial natural meat flavorings contain animal components, such as chicken, beef, or pork stock concentrates, rendered fats or lipid fractions, meat extracts or juices, and hydrolyzed animal proteins. These are used because they provide authentic meat notes efficiently and cost-effectively. Use of these components fueling climate change, deforestation, and resource depletion. The environmental cost of conventional meat is no longer sustainable.
The Status Quo
Replicating the distinctive, multi-layered flavour of meat without animal components remains a significant challenge. Plant-based and fermentation-derived ingredients produce off-notes, while advanced flavour systems are costly and struggle to achieve authentic meaty profiles. Maintaining clean-label formulations that satisfy consumer expectations further limits realism and scalability.
